      Vinification:

      Fermentation took place in stainless steel tanks, with alternating layers of partially destemmed and crushed grapes (50%) and whole clusters (50%). It proceeded at controlled temperatures of 24–28°C for around two weeks and was continued for a further five days after pressing.
